The long dough process releases the good properties of the original cereal flours. We see it as our duty to preserve this old knowledge and to win young bakers to continue the traditions.

Industrially produced bakery products are highly standardized in terms of taste and appearance. This largely automated production requires a very short dough-process. The required shelf life and freshness cannot be achieved with this production method without additives.
